Mushroom and Cheese Stuffed Baby Potatoes
Ingredients:
1 1-pound package Baby Red Potatoes, scrubbed
2 tablespoons butter or margarine
1 .5-ounce package Dried Shittake, Porcini, or Morel Mushrooms, chopped and rehydrated according to package directions, or chopped fresh brown mushrooms
2 tablespoons red wine
2 teaspoons snipped Fresh Chives or Dehydrated Chives
1/8 teaspoon pepper
1/2 - 1 cup crumbled blue cheese, or shredded mozzarella or Swiss cheese
Fresh herbs for garnish, if desired
Steps

Cook potatoes whole, according to package directions. Carefully halve potatoes; arrange cut side up on a broiler-proof pan. Preheat oven broiler to 500° F. In a small skillet melt butter; saut'e mushrooms 3 minutes. Add wine, chives, and pepper; simmer until liquid nearly evaporates completely. Spoon mushrooms onto top of each potato; sprinkle with cheese. Place 4 inches under broiler just until cheese melts. Serve hot. Βon appetite!!
