The common salt we all know is processed, means that it has been "cooked" to remove moisture, it has been ground to produce the desired grain size and has undergone chemical treatment, plus the addition of anti-caking agents and other chemicals to make it flow.  Crude salt is the salt that, on the contrary, has not undergone any treatment but is used as it comes out of the sea.

Are all salts unprocessed? No, there are many "natural" salts on the market, meaning they have not been chemically treated and do not have flow additives. However, they have been "baked" and very often rubbed, as a result of which they lose their moisture and part of the trace elements and metals that salt has from nature.
